Eggplant Recipes ( How To Cook )

               Hello! and welcome back here today on Garden The Easy Way, this is Ken and Marilou.  

               Today, Marilou and I have 2 more eggplant recipes. We hope you all will give them a try, we have not try them yet, but Marilou and I are going to decide on one and cook it on Sunday, we will give you a update later on which one we chose to cook, and how it turned. Sometime we try different things to cook and they taste so bad we throw it out, but we never give up, we just keep on cooking and trying different things to cook.    

               We sometimes get it just right and it is so delicious, and that is why we never give up our good home cooking, and when you get it right it will be better eating than any restaurant food you can buy, and the price is a whole cheaper. Well I will get off here and let Marilou give you the other 2 recipes that we found on the Internet. ( Enjoy ).  

# 1 Recipe:  

Eggplant and Rice    

Ingredients:  

1 cup uncooked rice  
1 chopped onion  
3 Tablespoons oil
1 eggplant  
2 cups tomato juice  
basil, parsley and thyme.  

Preparations:  

1. Cook rice till done for 10 minutes.

2. Steam the eggplant.  

3. Brown the onion in oil. Mix herbs with drained rice.

4. Add the eggplant. Grease a baking dish and pour in mixture.

5. Sprinkle with onion. Pour tomato juice over all, and bake 25 minutes until nice and bubbly.

#2 Recipe:  

Baked Eggplant  

Ingredients:  

2 cups eggplant pulp
2 eggs  
1/2 cup of milk
salt and pepper
1 cup corn flakes
1 tablespoon butter  

Preparations:  

1. Parboil the eggplant about 20 minutes. Cool. Remove the skin.

2. Press pulp through a colander. Beats eggs and milk together.

3. Add pulp and seasonings. Put the mixture in a buttered baking dish.

4. Sprinkle the corn flakes over the top. Dot with butter and bake at 350 until lightly browned. Serves 6
